If you're like me and like to pre-plan for your week...here is a recipe that is healthy, delicious and will help fuel you in the right way!!!!

Ingredients:

4 eggs     

1/2 cup egg whites

2-4 cloves of freshly chopped garlic

1/2 tsp himalayan or sea salt

1/2 tsp black pepper

1-2 cups chopped up baby spinach

....and then add any of the following;

 

1/4 c mushrooms and 1/4 c feta (for mushroom, spinach, feta breakfasts)

AND/OR 1/2 c red, yellow, orange or green bell peppers

grated cheese, tomatoes, onions – be creative!

 

Directions:

Heat oven to 350

Whisk the eggs, egg whites, salt and pepper in a big bowl - set aside

Mince the garlic and then add the spinach, mushrooms and feta (and/or peppers or anything else you’d like)

Grease your muffin tins, or you can put cup cake inserts in muffin tins and give them a light spray

Add ingredients mixture into tins, making sure you get around the same amount of mushrooms, feta and spinach in each

Cover ingredients with egg mixture leaving a little space for expansion on the top of each

 

Bake for 20 - 25 minutes and voila! Amazing, healthy and delicious breakfast for the next couple of days!
